They both suck tbh, but I picked FM cuz it's faster. Neither skill has much use, food is hardly needed for anything besides leveling cooking nowadays, and FM just keep you warm. I guess another factor too is that you can get the adze from FM where fishing offers little in the way of rewards.

Firemaking is pretty useless. I can light up a runway with the best of them, but what good is it if nobody ever lands there?

Fishing, on the other hand, is at least something that will make you a little money along the way.
