Sorry I didn't update with the guacamole recipe earlier, Mouselover reminded me i need to today!
*We make our guacamole by the case and I'm not sure off the top of my head how much avocado that is: The number ranges from 22 large avocados to 84 small, I'll try to find the actual weight next time I work so that the recipe can be adjusted for serving sizes.
1 case Avocado
1 cup diced jalapenos
2 and 1/2 cups diced red onion
2 and 1/2 cups cilantro(1/8 inch flakes)
1 cup citrus juice
3 tablespoons kosher salt
Scoop your avocados mash them to the consistency of smooth peanut butter
Add everything else and fold in until mixed well.

When storing guacamole oxygen will turn it brown, to prevent this saran wrap it twice. Saran wrap it once and use your hands to push the saran wrap against the guacamole so that air can't touch it. Then put another layer over it but don't push it against the guac, try to make it taught and air tight.
When serving guacamole after its been stored for more than 24 hours add salt and citrus to taste, this should revitalize it and help bring back flavor.
